Molten Bourbon Chocolate Cake with Bourbon Milk Jam and Candied Bacon

Introduction

Chocolate, dulce de leche and bacon? What more can you ask for?! This dessert is easy and oh so rich. It's a take on Nigella Lawson's original recipe, just my own indulgences added. You can bake all at once or just one or two and refrigerate the rest. I like using my flower shaped ramekins, but you can use cupcake molds and liners. Just be sure to butter generously and dust lightly the inside with cocoa so they come out easily. The cocoa works just like flour, but doesn't leave the white marks. Alternatively, use a cooking spray specifically for baking.

Ingredients:

4 T softened unsalted butter

12 ounces chocolate (I used 8 oz semisweet 56% and 4 oz unsweentend 100%)

4 large eggs room temperature 

Dash of salt

3/4 cup extra fine sugar

1 tsp pure vanilla extract

2-4 T bourbon

1/3 cup flour

1 cup bouron milk jam

4 pieces candied bacon chopped into small pieces

How to make:

  1. Place a baking sheet on the center rack of your oven. Preheat to 400 degrees.

  2. Butter generously and dust the inside of your baking dishes. I used Baker's Joy with success with 6 - 4 oz flower shaped ramekins.

  3. In a double boiler, melt the chocolate. Remove from heat and let cool while doing other prep.

  4. In a bowl, beat eggs and a dash of salt together until they are frothy, light, and even in color. This usually takes a few minutes. The texture will begin to change to more thick and foamy. In a separate larger bowl, cream together the sugar and butter. Slowly add the egg mixture and then the vanilla and bourbon. Mix in the flour then add the chocolate until the mixture looks smooth.

  5. Spoon the batter into the dishes. Remove the pan from the oven and place the dishes on the pan. Place back in the oven and bake for approximately 10 - 12 minutes. The top should appear firm and dry. Remove from the oven then place a plate or bowl over each cake and invert. They should come right out.

  6. Heat the bourbon milk jam for 15 seconds. Spoon over each cake. Sprinkle with candied bacon pieces. Serve immediately.
