Introduction
Candied bacon is delicious on it's own or as a garnish to dessert or salad. It is easy to make. In fact, when I first made it, I asked myself why I never did before. In this recipe I used cracked pepper, however I have also tried other spices, even Sriracha. It's fun to experiment to find all the possibilities that excite your taste buds.
Ingredients:
3 lbs thick cut bacon (I like hickory smoked)
2 cups (approx) brown sugar
cracked pepper
How to make:
Preheat oven to 375. Convention is best - it gets things crisper.
Line a large baking sheet with aluminum foil. This makes cleanup easier. Place an oven proof wired rack over the aluminum foil.
Place the bacon on the wired rack. Do not overlap. Using a pepper mill, add the black pepper. More if you want extra bite or less of you just want a little. Sprinkle with brown sugar and lightly press it on the bacon.
Place the pan in the oven and bake for 25-30 mins. 5. Remove the pan from the oven. Let it cool before eating as the candied part will burn your tongue. If your bacon is not crisp enough, cool a bit, then flip the bacon and broil. This should not take more than a minute. Be sure to watch to avoid burning.
